About This Coffee

This Pacamara variety coffee is grown at the Pillcocaja farm in the Yunguilla Valley of Ecuador at an altitude of 1600–1800 meters. Managed by Ana and Nicolas Crespo, the farm utilizes native faique trees for shade and benefits from the cool, slow maturation of the cloud-forest ecosystem. The cherries are hand-picked, float-sorted, depulped, fermented, and washed before being dried on African raised beds for 20-25 days. The flavor profile features notes of lemon zest, golden raspberry, and sugarcane.
