Geisha variety coffee from Altieri Coffee Mimas Estate in Callejon Seco, Boquete, Panama, grown at 1820 meters altitude. Processed using River Flow Fermentation Natural method, where whole cherries were submerged in cold river water for five days, then dried at constant 18°C temperature and 50% humidity for 30 days. Light roast whole bean with creamy body and flavor notes of cherry blossom, strawberry cream, and passion fruit.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
