It features heirloom varietals and is natural-processed, with cherries hand-sorted and dried in direct sunlight on raised beds over three weeks. The flavor profile includes dark chocolate, raspberry, and sugar cane notes with fruitiness, florality, medium acidity, and a sweet character.
