This coffee is from Finca Anaya farm in Acevedo, Huila, Colombia, grown at 1600 meters altitude. Produced by Sergio Dario Aranda Gomez, a third-generation coffee farmer who started the Anaya farm project in 2023. The variety is Typica Mejorado, processed using washed method with yeast inoculation. The processing includes controlled fermentation in fresh cherry, selected yeast inoculation, and pre-fermentation with fruit, with careful monitoring of pH, Brix, and temperature. The coffee is sun-dried naturally after thorough washing. Flavor profile features watermelon, papaya, strawberry, fruit notes, chocolate, bright acidity, and full body. Very sweet and refined.
