About This Coffee

This coffee is from Ratnagiri Estate, grown in the Godown Patte block at 1,341 meters altitude. The cherries undergo a specialized process involving an ozonator to remove surface microbes, followed by a 48-hour controlled fermentation using a proprietary terroir culture and lactic acid bacteria. The beans are then dried for 29 days. This light-roast coffee offers a complex flavor profile with notes of rose, lychee, custard apple, and forest honey, finishing with a distinct rose tea-like character. It is best enjoyed black, prepared as a pour over or with an AeroPress.

Matt Chitharanjan, Namrata Asthana, and Shivam Shahi founded Blue Tokai Coffee Roasters in 2013, starting with a single one kilogram roasting machine that has since grown into a fleet of Probat roasters, including two 12 kilogram and one 25 kilogram machine, spread across four roasteries in India and one in Japan.
