This decaffeinated coffee is produced by Sebastián Ramírez at Finca El Placer in the Quindío region of Colombia at an altitude of 1700–1800 meters. The Castillo variety undergoes an intensive co-fermentation process with wine yeast, dehydrated strawberries, and fruit glucose, followed by Ethyl Acetate Decaffeination. The resulting cup offers a smooth and sweet profile with distinct notes of strawberry jam, dulce de leche, milk chocolate, and chocolate cherries.
