This coffee is a Red Catuai variety from the Sítio Santa Catarina farm in Carmo de Minas, Brazil, grown at an altitude of 1,275 meters. It undergoes an anaerobic natural process, where cherries are fermented in an oxygen-free environment before being sun-dried. This method results in a full-bodied coffee with a mild acidity and a distinct, long-lasting sweetness. The flavor profile features notes of raspberry jam, roasted hazelnuts, and toffee.

Kaffeekirsche was founded in 2014 in Berlin Kreuzberg near Adalbertsrasse, beginning a journey that has seen the roastery move and expand multiple times as demand grew. In 2017 the operation relocated to Böckhstrasse alongside a new cafe and bakery, and by February 2022 the main roastery had settled in Tempelhof with an attached cafe, bringing the total to three Berlin locations. All coffee is drum roasted daily, with a focus on single origin Arabica beans sourced from origins including Colombia, where Pink Bourbon from the Cauca region is among the standout lots. Their omni roast philosophy means each coffee is developed to perform across both espresso and filter brewing methods. Signature roasts like the Dark Side Espresso and Gran Galope, known for its full body and lingering sweetness, showcase the range and ambition of their roasting program.
