Finca Canelón is a 10-hectare coffee farm located in the Quellouno district of the Cusco region, Peru, operated by the Arizaca family. The farm borders Manu National Park and is part of the Valle Inca producer network. During harvest, only ripe red cherries are hand-picked, then sorted by flotation, pulped, fermented for 36 hours, washed in clean water, and dried on covered raised wooden beds for up to 18 days. The result is a round and easy-drinking coffee with a pleasant body and notes of sweet caramel and mandarin.
