This Panamanian coffee is produced by Abu Coffee Panama, specifically from Lot TN-630. It is a Catuai variety processed using an experimental ASD (Anaerobic-Solar-Dry) Natural method. The cherries are hand-picked at optimum maturation, then pre-dried in the sun on elevated beds for 72 hours. They undergo dry anaerobic fermentation for 96 hours in closed grain-pro bags submerged in spring water, followed by final sun-drying for 25 days on elevated beds. The farm is operated by José Luttrell, continuing the legacy of his grandfather José Guillermo Luttrell Tedman, the third generation of coffee producers in Boquete.
