About This Coffee

This single-origin Peru coffee is produced on nine microlots by female farmers including Edith Pena, Mary Montejo, and Petronila Lale. The coffee is grown alongside vanilla, sweet potatoes, and peanuts, with fruit trees providing shade. Processing involves selective handpicking, floating to remove underripe cherries, pulping, and anaerobic fermentation in plastic barrels for approximately 18 hours. The parchment is washed, dried in parabolic dryers, hand-raked frequently for even drying, and hand-sorted to remove defects.
