Lucero, Peru

About This Coffee

This single-origin coffee comes from the small town of Lucero in the Namballe district, San Ignacio province of Cajamarca, Peru, near the Ecuadorian border. Grown at 1600-1800 meters above sea level by farmers managing 1-2 hectare plots, the coffee features Caturra, Bourbon, and Catimor varieties cultivated under a canopy of native Pacay shade trees. Traditional agroforestry methods are used to protect soil and enhance slow cherry maturation. The coffee displays melted chocolate and caramelized sugar notes with ripe raspberry and concord grape, complemented by vanilla bean, brown sugar, pecans, and praline. It offers a creamy texture with bass and treble equalized experience.

Pipe & Tabor Roasting

Established in 2016 by veteran roaster Stephen Rogers, who brings 25 years of experience to the craft, Pipe & Tabor is located in Red Hook, Brooklyn NY. At the heart of their operation sits a signature 1953 Barth Novo Cito cast iron drum roaster, a machine that relies on the roaster's sensory skills: smell, color development, and time rather than digital instruments. They source through Red Fox Coffee Merchants and demonstrate their commitment to farmer welfare by paying 4 to 6 times higher than commodity market prices. This dedication to quality at every stage defines their approach to roasting.
