This Pink Pacamara coffee is from Los Pirineos farm in the Tecapa Chimameca region of Usulután, El Salvador, situated at 1300-1600 meters altitude. The farm is run by the Baraona family and located atop the Tecapa volcano mountain range. The Pink Pacamara variety is washed processed, with fully ripe cherries hand-picked, floated to remove defects, and pulped before undergoing controlled dry fermentation of 10 to 14 hours under shade. After washing, the coffee is dried slowly on raised beds with full daylight exposure and mountain winds. The result is a polished and transparent filter coffee with gentle stone fruit sweetness, crisp orchard fruit character, and subtle pandan-like aroma. Flavor notes include Nashi Pear, Nectarine, and Pandan.
