Lilac Dream is a filter-oriented coffee currently sourced from a single daylot at the Los Andes farm in El Cedral, Honduras. The lot comes from producer Wilmer and includes varieties such as Bourbon, Pacas, Geisha and Catimor. The lot emphasizes washed processing and careful drying protocols. Expect a tea-like texture with stone-fruit sweetness, underlying florals, peach and bright orange juiciness, roasted for a filter-style profile.
Founded 2007 by engineers-turned-roasters in Calgary, Phil & Sebastian sources exceptional single-origin beans via direct-trade, roasts meticulously in-house, and operates several cafés.
