This coffee is a Guanabana-washed Caturra from Huila, Colombia, produced by Brayan Alvear of Finca Las Palmas. It underwent a multi-step, cofermentation with Guanabana (soursop) and subsequent washing, resulting in a clean cup with a round, fruity character. Origin details include Huila region at about 1600 meters elevation. The roast is Light with tasting notes of pineapple, cherimoya, and pink laffy taffy.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
