La Cristalina is a single-origin coffee from the Huila region of Colombia, produced by the Association Palestina. This lot is a monovarietal Tabi, an Arabica variety recently introduced to the region. It is processed using the natural method, which contributes to its flavor profile. The coffee is characterized by vibrant, fruity notes, specifically passion fruit, apricot juice, and pink berries. It offers a deep and intensely fruity experience with a crystalline clarity, reflecting the high-altitude environment of the Huila region.
Coutume operates a full scale roasting facility in the Ile de France region and supplies more than sixty bars, restaurants and hotels across the city with a wide rotating selection of single origin and experimental lots. Founded early in Paris’s third wave movement, the roastery curates more than twenty coffees at a time and treats origin detail and terroir the way a sommelier treats vineyard notes. They offer both espresso and filter profiles and trade regularly in rare varietals alongside reliable crowd pleasers, plus retail packs and subscription options for regular customers. Coutume’s roasting operation is professional and production oriented while still holding tight to specialty sourcing principles.
