Produced by Pranoy Thipaiah, this lot utilizes a cultured washed processing method, where controlled microbial activity is applied to the fermentation process. The result is a clean and transparent cup profile featuring notes of plum, dark cherry, and dried apricot. It offers a lingering caramel sweetness in the finish, complemented by a soft, balanced acidity.
Launched in 2025 as a project by The Roasters Pack, Coffee Wallas is an Asian owned Toronto roastery dedicated to spotlighting specialty coffee from across Asia. The name roughly translates to "People of Coffee," capturing the mission to celebrate diverse Asian coffee profiles that are often underrepresented in the specialty world.
