Processing combines CM Natural with a Washed Finish, including ripe cherry harvesting, CO2 sealing, short controlled fermentation, pulping, washing, and drying on raised beds for 20-25 days. Drying room controls temperature, humidity, and airflow to optimize flavours. Tasting notes include Jasmine, Yellow Peach, Apricot, Orange, and Honey.
