This Arabica Typica from Lingtong in North Sumatra is processed using Giling Basah, the traditional wet-hulling method that gives Indonesian coffees their distinctive heavy body and earthy complexity. Grown between 1350 and 1500 meters, the beans are roasted using charcoal sumiyaki, a Japanese technique that layers smoky character over the coffee's natural profile. The result is a bittersweet cup with crisp edges and a clean finish, where the roasting smoke integrates with the variety's inherent complexity rather than obscuring it.
