This coffee is from the Tinamit Tolimán agricultural cooperative in San Lucas Tolimán, Guatemala, located on the shores of Lake Atitlán. The cooperative was formed in 2016 and formally established in 2018, consisting of 26 Kaqchikel coffee growers. Farms are located between 1500 to 2000 meters above sea level. This natural processed coffee is harvested by hand and delivered the same day to the processing center. Fully ripe cherries are cleaned and set on the patio to dry in the sun for 5-6 days, then moved to shade-covered raised beds to finish drying. The coffee is frequently turned to ensure even drying throughout the process.
