About This Coffee

This coffee is a washed Arabica from the COIPEC cooperative in the San Marcos region of Guatemala. It is a farmer blend featuring Bourbon and Caturra varieties, classified as Strictly Hard Bean (SHG) due to its high-altitude cultivation along the narrow valley slopes of the Río Naranjo tributary and source area. The coffee has a gentle to medium body with chocolate flavors and pleasant floral notes. The region receives annual rainfall between 2,500 and 3,000 mm, and farmers also cultivate avocados, Pacaya palm hearts, bananas, and Jocote plums alongside coffee.

Franz Morish Kaffeerösterei opened in 2015 in Leipzig, near the Grassi Museum, establishing itself as one of the city's few roasters with a fully visible in house roasting operation. Their approach to espresso involves slightly higher final temperatures and longer roast times to reduce acidity and build body, while filter coffees are roasted faster to preserve bright, fruity flavors. This dual methodology reflects a thoughtful understanding of how different brewing methods demand different things from the bean. They source specialty grade green coffee from origins including Colombia's Huila region, Brazil, India, and Congo, offering both single origins and omni roasts.
