This coffee is from the Rosma Farm in San Pedro Necta, Huehuetenango, Guatemala, grown at 1500-1900 meters altitude. Produced by Fredy Morales, the coffee is from a special plot called Rosmarago, cultivated with Pacamara (75%) and Maragogype (15%) varieties. The coffee is fully washed, with cherries picked at sunrise and meticulously sorted for ripeness, undergoing density sorting, gentle depulping, pH-monitored fermentation (12-36 hours), and slow drying on African beds for 12 days. The medium roast offers flavor notes of apricot, baked apple, mandarin orange, amaretto, and raw caramel, with a juicy and clean finish.
