Las Peñas is a 100% Arabica coffee from Aldea El Pajal, Huehuetenango, Guatemala, grown at 1,550–1,700 meters altitude on the limestone hills of Pedro Aguilar's farm. Varieties include Caturra, Bourbon, Mundo Novo, and Catuaí. The coffee is washed and fermented — cherries are depulped, dry-fermented for 32 hours in ceramic-lined tanks, rested in clean water for 12 hours, then sun-dried for six days. Flavor notes include cocoa, praline, and plum, with pronounced acidity, balanced sweetness, and a velvety texture.
