The coffee undergoes a unique anaerobic fermentation process in a bioreactor using Saccharomyces cerevisiae yeast, commonly used in beer and wine production. This light roast coffee offers a complex flavor profile featuring notes of peach gummy, jasmine, and red tea, with a structured finish and a subtle hoppy character.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024.
