About This Coffee

This Gesha variety coffee is produced by Jhoan Vergara in the Huila region of Colombia at an altitude of 1,750 meters. The coffee undergoes a 60-hour anaerobic fermentation followed by a thermal shock process, where it is washed with cold water to lock in flavor. The resulting cup features a bright citric acidity reminiscent of pink grapefruit and lemon, complemented by a vanilla sweetness and unique spiced undertones of cardamom as it cools.

Devoción

Founded in 2006 by Colombian-born Steven Sutton, who returned to his homeland after years abroad to source coffee in regions others wouldn't dare venture, Devoción has revolutionized freshness in specialty coffee by establishing their own network of over 500 farmers across Colombia. The company began in Colombia in 2006 and implemented—believed to be one of the first—a network that would go into all zones in Colombia, doesn't matter if it was a safe zone or a rough zone, dry-milling at their Bogotá facility and FedExing beans to their Brooklyn roastery, achieving an unprecedented farm-to-cup timeline of just 10 days versus the industry's 6-12 months.
