This coffee comes from the Frinsa estate in Indonesia, sourced from Wildan Mustofa's farm. The lot features local varietals processed using a specialized experimental method: cherries are fermented with Lactobacillus for 3 days, pulped, dried on raised beds, then Rhizopus fungus is added and covered with tarpaulin to ferment for 36 hours. This creates a wild and fruit-forward profile with deep sweetness and lime-like acidity.
