A 100% Arabica, organic and fair trade coffee from the Shilicho Cooperative in the Sidama region of Ethiopia, located in the Dara district at 1,880 meters altitude. The cooperative was founded in 1968 and comprises 2,236 member families. The coffee is processed using the wet/washed method: cherries are depulped on the day of harvest, fermented for 36 hours, then carefully washed. The variety is Heirloom (indigenous Ethiopian variety). The cup profile is floral and fruity, with bergamot and citrus notes, a very delicate body, pleasant sweetness, and bright acidity. Light roast.
