This coffee is grown on Kayon Mountain Farm in the Guji zone of Ethiopia. The farm spans 300 hectares with an on-site plant nursery, owned and operated by Ismael Aredo. Indigenous tree species including acacia are used to shade the coffee plants, and cuttings from these trees create nutrient-rich composts. The coffee is composed of native Ethiopian heirloom varieties. It is processed using the natural/dry method, where ripe coffee cherries are harvested, sorted, rinsed, and spread out to dry in the sun for 8-25 days depending on weather conditions before being hulled. Tasting notes include lemon, apricot, buttery, and molasses characteristics.
Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
