El Zapoteco is a washed coffee from Santo Domingo Cacalotepec, Sierra Juárez, Oaxaca, Mexico, grown at 1300–1700 meters above sea level. It is produced by a group of approximately 180 smallholder families led by Romulo Chavez, with farm sizes averaging under one hectare. The varieties are Typica, Mundo Novo, and Bourbon. Coffees are pulped, fermented in hand-built wooden tanks, and dried on traditional woven mats. The cup profile features ripe stone fruit, cashew, and citrus peel with a full, juicy, and sweet character.
