About This Coffee

This single-origin coffee is a Maragogype variety from the Ahuachapan region of El Salvador, grown at an altitude of 1400–1500 meters. Processed using an anaerobic natural method, the beans are dried slowly on African beds for 25–30 days. The cup features a medium-high, smooth body with intense fruity acidity, offering notes of dried fruit and citrus complemented by a delicate winey aroma. Miga Coffee Roasters

Miga Coffee Roasters was founded by Wojciech Kaminski, an Arabica Q Grader and World Coffee Events judge, in Racibórz, Poland, bringing a level of formal sensory expertise to a small city roastery that operates with the environmental consciousness of a much larger organization. The roastery operates on a 15 kilogram Giesen machine and maintains a quality lab equipped with moisture, density, and color measuring instruments, a setup that allows Kaminski to apply the same analytical rigor to everyday production that he brings to his work as a competition judge. Miga was the first roastery in Poland to use fully compostable coffee packaging, and installed an electrostatic filter to reduce smoke and odor from roasting emissions, commitments to sustainability that earned the operation a zero waste roasting philosophy that extends from sourcing through to the final product reaching the customer. The company takes full responsibility for its beans from the moment they arrive as green coffee through to the roasted product, and every decision along the chain is made with environmental impact as a primary consideration. Miga Coffee Roasters demonstrates that a small town Polish roastery can lead the entire country in sustainable innovation when the founder combines world class sensory credentials with genuine environmental conviction.
