This decaffeinated coffee is sourced from the Gedeo region of Ethiopia, grown at an altitude of 1,900 to 2,100 meters. It is an Heirloom variety processed using the Mountain Water Process. The flavor profile features notes of cinnamon cookie, dried-fruit granola, and hoji tea, with hints of salted caramel and lemon peel emerging as the coffee cools. This washed coffee is suitable for those seeking a relaxing cup at any time of day.
Founded in 2020 in Sumida-ku by Machi Kodama and Sho Takanaka, ou·bai·tou·ri takes its name from a four-character Japanese idiom (桜梅桃李) meaning cherry blossom, plum, peach, and apricot, an expression that each should be valued for its own character. Kodama won the 2023 1st Crack Coffee Challenge roasting competition. The roastery focuses on light roasts with fruit-forward profiles, sourcing seasonal lots and emphasizing the inherent flavors of each origin.
