This Colombian coffee is produced by Don Wilson Alba Córdoba, a third-generation coffee farmer working on the Sierra Morena farm, which has grown to 13 hectares. The coffee is Pink Bourbon variety. Cherries were picked at peak ripeness, fermented in-cherry for 15 hours, depulped, washed, and barrel fermented for another 15 hours. After rinsing, the coffee was dried in parabolic greenhouse solar dryers with raised beds until reaching 10% moisture content. The cup profile features tangerine-like citrus, deep red fruits, and a lingering hibiscus finish.
