This coffee is from Colombia, specifically from the Acevedo area in Huila region at 1730 meters altitude. Produced by Rodrigo Sanchez Valencia at Finca Monteblanco, it features the Pink Bourbon variety. The coffee undergoes a cold washed process, where cherry is picked at 26-30 Brix degrees, pulped, and fermented at 10-14°C for 76 hours in sealed bags. After fermentation, the parchment is dried in direct sunlight for 1-2 days, then moved to shade-raised beds for 23-25 days. The cup profile offers lemongrass and floral notes with a fresh, sweet, and floral lemonade character.
