This single origin coffee comes from Betania Farm in Palestina, Huila, Colombia, grown at 2000 meters elevation. Producer Linarco Rodríguez cultivates the SL28 variety as part of a network of 117 smallholder farmers committed to soil health and biodiversity. The coffee undergoes washed processing with a 32-hour controlled anaerobic fermentation in sealed tanks, followed by slow drying on raised beds for 20-25 days to reach 10-11% moisture. The cup profile features lime cordial, orange, and blackcurrant notes with citrus and tangerine-like acidity. This filter roast is designed for pour over and other filter brewing methods.
