This Geisha coffee comes from Las Marias Estate in Pijao, Quindio, Colombia, the newest farm of the Giraldo family. Located at high elevation in the heart of the Andes Mountains and surrounded by native forest, the farm was recovered from 20 years of abandonment. The Geisha seeds were sourced from Panama. The washed processing involves selective harvesting at 20 Brix sugar level, a 12-hour cold fermentation of whole cherries at 14°C, pulping without water followed by 24-hour cold fermentation, and drying on raised African beds for approximately 25 days at temperatures below 35°C to achieve 10-11% moisture content.
