This Geisha coffee is from Las Margaritas farm in Colombia, owned by Rigoberto and Luis Eduardo Herrera, third-generation coffee producers. The coffee underwent a dry anaerobic fermentation for 30 hours, then was placed on raised beds until reaching 20% moisture content. It was then placed inside grainpro bags for 80 hours where fermentation was driven by natural yeast, and finally dried on raised beds to 10.5% moisture content. Las Margaritas produces classic Colombian varieties as well as exotic varieties across 52 producing hectares.
