The beans undergo a dual-phase fermentation washed process: initial anaerobic/submerged fermentation (12–24 hours) while whole, followed by pulping and second fermentation (18–24 hours) with mucilage retained in open tanks. Offers vibrant red fruit character with red grape, cherry, citrus, and molasses sweetness layered with subtle floral notes.
