This single origin coffee comes from El Vergel Estate in Fresno, Tolima, Colombia, managed by farmers Elías and Shady Bayter. It features Red and Yellow Caturra varieties processed using a natural anaerobic method with 48 to 60-hour fermentation. The beans are initially sun-dried on raised beds in a Marquesina until 30% moisture, then mechanically dried in circular dryers below 45°C. After reaching optimal moisture, the beans are stabilized for 45 days in GrainPro bags. The flavor profile includes chocolate, plum, guava, red fruits, citric acid, and tangerine notes.
