This decaffeinated coffee is from El Vergel farm in Colombia, managed by the Bayter Family since 1995. The farm grows specialty coffee varieties including Catimor, Red Caturra, and Yellow Caturra. The decaffeination process uses ethyl acetate to reduce caffeine levels to 0.1%. The coffee undergoes special fermentation including the Koji fermentation process to extract unique flavors. The result is a smooth and flavorful decaf coffee suitable for both filter and espresso brewing.
