This single-origin coffee is produced by Diofanor Ruiz at La Divisa farm in Quindío, Colombia, at an altitude of approximately 1800 meters. The Castillo variety is processed using a controlled natural method, including a 45-hour aerobic fermentation and slow sun-drying for 10 to 15 days. This coffee offers a complex flavor profile featuring notes of tropical fruits, cherry, dark chocolate, and stone fruit, resulting in a full-bodied cup with intense fruitiness and natural sweetness.
