This coffee is grown on a 4.5-acre plot of mature Castillo trees in Colombia. The cherries undergo 2–3 days of open-tank oxidation, followed by pulping and a four-day sealed fermentation process using coffee mosto and panela. This controlled fermentation method is designed to ensure a thorough process while avoiding unwanted alcohol-like flavors.
