CARTHAGE is a rotating single origin coffee from Africa. This current lot comes from smallholder farmers at the Ichamara factory in Nyeri County, Kenya, on the slopes of Mount Kenya. The coffee features SL28, SL34, and Ruiru-11 varieties grown at 1600 to 1800 meters altitude in volcanic soils. It is washed processed and light roasted for filter brewing. The cup profile offers cherry, hibiscus, and raspberry notes with crisp acidity, high sweetness, and a silky, lingering finish.
Ben Rahim, a Tunisian coffee professional, founded his eponymous cafe and roastery in 2015 at the historic Hackesche Höfe in Berlin Mitte. The concept was Berlin's first third wave coffee shop to incorporate an Arabian twist, drawing on North African and Middle Eastern coffee traditions alongside modern specialty techniques.
