A washed Sarchimor from Mexico sourced from Finca Pocitos and Finca Huehuetepan. Ripe cherries are depulped, fully washed, and dried ~36 hours on raised African beds. The coffee displays a mellow, trail-mix-meets-biscuit profile with soft dried-apple sweetness and a cookie-like finish. Roasted for espresso with a smooth, comforting body and chocolaty undertones.
