Canaris is a community lot from the province of Ferreñafe, Lambayeque, Peru. This coffee is grown by six small-scale producers at an altitude of approximately 2,000 meters above sea level. The cherries undergo a washed process, including a 12-hour fermentation in whole cherry followed by depulping and an additional 48 hours of fermentation. This coffee features a bright and clean profile with tasting notes of apricot, stewed plum, and almond.
