This coffee is a lot from the Ayarza region in Santa Rosa, Guatemala, processed at the Blue Ayarza Cherry Mill. It is an anaerobic natural coffee that undergoes a 120-hour fermentation of whole cherries in airtight bags, followed by sun drying and mechanical drying. The blend consists of Anacafe 14, Bourbon, Catuai, and Pache varieties. The flavor profile features notes of cherry cola, tropical fruit, and chocolate pralines, offering a full body with lower to medium acidity.
