About This Coffee

This coffee is sourced from the Shakiso region in Guji, Ethiopia, at an altitude of 1900-2100 meters. Produced by the Biru Bekele washing station, the coffee is a fully washed Heirloom variety. The cherries are depulped within six hours of harvest, fermented for 24-36 hours, and dried on raised beds for 10-14 days. The flavor profile features notes of watermelon hard candy, fresh lime, and an herbal, lemongrass-like quality.

Regalia Coffee

Paolo and Chisato Malikski co founded Regalia Coffee in 2018 in Long Island City, Queens, building on work Paolo began in 2017 alongside coffee expert Scott Rao at the original Multimodal roasting facility. Paolo, a classical musician turned roaster and international roasting instructor, brings a meticulous ear for nuance to every batch. Regalia now operates from a 7,000 square foot facility called Multimodal, equipped with a Diedrich IR5, Mill City Roasters, and a Probat P25/2, serving both their own production and other roasters through shared access and toll roasting services. Their mission centers on lowering barriers to entry in the coffee industry while maintaining fair, sustainable sourcing practices. The roastery earned Gold at the 2025 Global Coffee Awards in the Filter/Experimental category.
