This coffee was grown by Jairo Arcila at the farm Castellon in Colombia. The variety was discovered in Inza, Cauca, and has genetics similar to Bourbon Aruzi from Ethiopia. Cherries are harvested following strict ripeness criteria, floated and hand-sorted to remove defects. The coffee undergoes 30 hours of underwater fermentation before being pulped. The parchment is gently washed and dried in temperature controlled conditions until ideal moisture content is achieved. This variety has higher yield and increased resistance compared to typical coffee grown in the region.
