This exceptional lot comes from the highlands of Sidama, Bensa, Ethiopia, at 2,442 meters altitude, grown by producer Tamiru Tadesse of Alo Coffee. The variety is JARC 74158. Cherries are harvested at full maturity, sorted carefully, then processed using the innovative Dark Room Washed method: depulped cherries are dried slowly in the shade on raised beds to approximately 30% humidity, then transferred to a controlled dark room where airflow and humidity are finely regulated for a long, uniform, and clean drying. Flavor notes include jasmine, candied lemon, lemongrass, and white peach sweetness, with a very persistent floral finish and a delicate, vibrant acidity. Roasted for filter.
