A microlot coffee from the highlands of Sidama, Bensa, Ethiopia, grown at 2,442 meters altitude by producer Tamiru Tadesse of Alo Coffee. The variety is JARC 74158. Cherries are harvested at full maturity and undergo the innovative Dark Room Natural process: first dried in the shade to ~20% humidity, then transferred to dark rooms with controlled ventilation for an extremely slow, uniform drying over 57 days until reaching 11% final humidity. Flavor notes include honey, jasmine, citrus acidity, white grape, and mandarin, with a rich body. Roasted for filter.
