This washed-processed Tabi varietal coffee is produced in Huila, Colombia by Jhoan Vergara Ayure at Finca Las Flores. The farm is located at 1780 meters above sea level. The coffee features tropical and floral characteristics with honey notes. The lot began with careful handpicking of ripe cherries, followed by disinfection and floating to remove impurities. It underwent a 24-hour submerged fermentation, followed by an additional 24 hours of oxidation in cherry. After depulping, the coffee was placed in anaerobic fermentation for 48 hours before drying with dehumidifying equipment. Harvest time is October through December.

Kimhak brings over 30 years of food service experience and a culinary background; Eugenia combines structural engineering with commercial illustration and handles the brand's visual identity.
