This natural-processed coffee is from the Guji Highland Coffee Plantation in Region Oromia, Guji Zone, Ethiopia. Grown at altitudes between 2000-2150 meters above sea level, the coffee features heirloom varieties harvested from October to January. The estate, established in 2012, operates in natural semi-forest areas with strict production guidelines. The natural processing involves drying whole cherries for up to four weeks with regular turning, followed by meticulous hand and mechanical sorting to remove defects and ensure optimal quality. Flavor notes include blackberry, molasses, and chocolate.
